All animals are a little different, but the following is an example of approximately what you could expect on a quarter animal with a 137.5 lb hanging weight and standard processing: approximately 15-18 lbs of grilling steaks (including tenderloins, rib steaks, T-bones or NY strips, sirloins), approximately 22-24 lbs of roasts (including chuck, sirloin tip, rump, round, brisket), approximately 27-32 lbs of ground beef, approximately 13-16 lbs of other cuts (including stew, short ribs, round steak, cube steak), and about 3-6 lbs of shanks/osso bucco & soup bones.
