An average Quarter Bison will weigh approximately 125 lbs hanging weight. You will lose approximately 30-38% from hanging weight to the meat in your freezer, giving you approximately 87.5 lbs of meat in the freezer. The following price breakdowns are based on an average animal and are estimates. Your animal could be a bit larger or smaller than this and your final price for meat in the freezer can vary depending on the animal size and butchering choices. All animals are a little different, but the following is an example of approximately what you could expect on a quarter animal with a 125 lb hanging weight and standard processing: approximately 17-20% grilling steaks (including rib steaks, T-bones or NY strips, sirloins), approximately 24 - 26% roasts (including chuck, sirloin tip, arm, rump, round), approximately 30-35% ground beef, approximately 15-17% other cuts (including stew, short ribs, round steak, cube steak), and about 4-6% shanks/osso bucco & soup bones. Butchering choices will affect your final cuts.
