All animals are a little different, but the following is an example of approximately what you could expect on a quarter animal with a 125 lb hanging weight and standard processing: approximately 17-20% grilling steaks (including rib steaks, T-bones or NY strips, sirloins), approximately 24 - 26% roasts (including chuck, sirloin tip, arm, rump, round), approximately 30-35% ground beef, approximately 15-17% other cuts (including stew, short ribs, round steak, cube steak), and about 4-6% shanks/osso bucco & soup bones. Butchering choices will affect your final cuts.
